Super Greens Salmon

If you're a fan of pesto then you've come to the right page šŸƒ This super greens recipe is essentially fancy pesto pasta with salmon but made entirely from scratch - and it’s surprisingly easy!


My latest obsession, this dish is full of delicious greens and topped with heart-healthy salmon making it exceptionally good for both your body and brain, plus it helps fight inflammation and supports immunity. It's also just seriously tasty. Give it a try!

Ingredients

ā— 1 fresh lemon, juiced

ā— 40g parmesan, grated

ā— 400g can butter beans (with liquid)

ā— 100g spinach

ā— 25g fresh basil

ā— 2 garlic cloves

ā— 2 tsp sugar

ā— 180g asparagus, roughly chopped

ā— 2 tbsp olive oil

ā— 200g dry orzo

ā— 500ml veg stock

ā— 4 salmon fillets

ā— 10g pumpkin seed

Method

  1. Begin by placing the lemon juice and 30g of the grated parmesan in a blender alongside the butter

beans with their liquid, spinach, garlic and basil (minus a few leaves for garnish), and sugar. Blend until smooth.


  1. Add 1 tablespoon of the olive oil to a large frying pan and gently sautee the asparagus with salt and

pepper for 2-3 mins until they start to soften.


  1. Add the orzo to the pan with the asparagus and fry for another minute, stirring, before adding the

vegetable stock.


  1. Bring to the boil and simmer for 7-8 minutes, stirring, until the orzo is cooked al dente.


  1. Meanwhile, pat dry the salmon skin with kitchen paper and season the skin with salt.


  1. Add the remaining olive oil to a separate pan and fry the salmon skin side down over a medium heat

for 5 minutes, before flipping it to gently cook the flesh for the final minute.


  1. Cover the orzo with the super greens sauce and stir for 2 mins until the sauce is heated through.


  1. Dish up the orzo with the remaining parmesan and a scatter of pumpkin seeds, then place the salmon on top of the orzo.


  1. Season with pepper and garnish with the basil leaves and zest from the lemon skin.
