Ready to tantalise your tastebuds? My healthy chicken fajita recipe is pure hearty goodness, full of flavour, colourful veg, and containing just 415 calories per wrap. Going low-carb? Skip the wrap to save an extra 145 calories.

Healthy Chicken Fajitas


Ingredients

  • 350g skinless chicken thighs - roughly chopped

  • 1 small white onion - roughly chopped

  • 1/2 red pepper - sliced into thin strips

  • 1/2 yellow pepper - sliced into thin strips

  • Handful of mushrooms - sliced

  • Handful of curly kale - roughly torn

  • 1 beef stock cube (the crumbly kind!)

  • 1-tsp paprika

  • 2-tsp thyme

  • 2-tsp chilli powder

  • 2-tbsp tomato puree

  • Olive oil

  • Red wine

  • Black pepper

  • 1-tbsp creme fraiche

  • 50g cheddar cheese - grated (optional)

  • Wholemeal wraps

Method

  1. Heat a large frying pan on high and pour in a generous splash of olive oil. Throw in the onion, peppers and mushrooms and stir fry on high for 5 minutes until beginning to soften.

  2. Make a well in the middle of the veg, add the chicken and sear for 3 minutes or until browned on all sides.

  3. Stir the veg back in with the chicken and add the torn kale. Continue to stir fry for a further 5 minutes.

  4. Turn the heat down to low and crumble the stock cube into the pan, also adding the spices and tomato pureé. Stir well to combine.

  5. Add a generous pour of red wine (approx 4 tbsp) along with a generous crack of black pepper, then add the creme fraiche and stir through.

  6. Allow the flavours to combine in the pan for a few minutes, stirring occasionally.

  7. Check the consistency of the sauce. If you like yours a little runnier, you may like to add a little splash of water to the pan at this point.

  8. Spoon the mixture onto your wrap and add a little grated cheese if desired.
