Protein Salad: Chicken, Pesto & Feta

There’s nothing boring about this salad! Packed full of flavour and a rainbow of veggies, it’s the ultimate gut-loving lunch - and with a massive 49g of protein and 591 calories per serve there's really not much to dislike.


Options: For a lower calorie version, remove the rice and seeds to save 108 cals. To make it vegetarian, swap the chicken for tofu or seitan.

Ingredients

  • 240g chicken breast (skin removed, diced)

  • 100g cooked brown rice

  • 25g feta

  • 100g mixed salad leaves

  • 6 cherry tomatoes (halved)

  • 1/2 red pepper (diced)

  • 12 slices of cucumber (halved)

  • 10 pitted black olives

  • 30g red onion (thinly sliced)

  • 2 tbsp black beans

  • 20g mixed seeds/nuts of choice


For The Dressing

  • 80g basil pesto

  • Juice from 1/4 lime


Method


  1. Season the chicken breast with salt and pepper, then cook on the grill or in an Air Fryer at 200 degrees for 8 minutes. Ensure the meat is no longer pink in the middle.

  2. Meanwhile, throw all the remaining ingredients into a large bowl and use your hands to mix in the pesto and lime dressing, until everything is well coated.

  3. Add the slices of chicken breast once cooked through, then plate up and enjoy the nourishment! Easy!
